Garden Egg sauce in a tasty and nutritious sauce, mainly served with boiled plantain or boiled yam. It is mainly prepared with palm oil, it can as well be prepared with vegetable oil but I don't approve that.
I don't think there is a better pairing to freshly boiled plantain than garden egg sauce. Anyways, here is my take on garden egg sauce. The recipe varies across households. For those outside Nigeria, you will find Garden Eggs in local ethic grocery stores.
INGREDIENTS
*6-8 large garden eggs (any shape will do)
* 2 tablespoons of palm oil
* ½ of a medium onion ( thinly sliced)
* 2 large Bell pepper (Tatashe), 2 hot pepper (Rodo) and 1 medium onion (rough blended)
* Flaked fish (I used mackerel- boiled and De-boned
* 1 tablespoon of blended crayfish
* Seasoning and salt to taste
* Plantain
METHOD
* Boil the Garden eggs for 5mins. Remove from heat and set aside to cool. Peel the garden eggs skin by gently pulling on the thin white coating out and remove the seeds In the center if you prefer. Roughly chop up the the peeled garden eggs or lightly crush them.
* Set a pot on medium heat, add the oil and wait 2minutes then add in the onions. Fry the onions until translucent. 
* Add in all the ingredients except the fish. Reduce the heat to medium and simmer the sauce for 10mins.
Allow to cook for 3mins

Enjoy!!! With boiled Plantain
