Ingredients
- GIZZARD (0.5KG)
- LIVER (0.5KG)
- PLANTAIN (2 MEDIUM SIZE)
- FRESH TOMATOES (4)
- VEGETABLE OIL (ENOUGH FOR FRYING)
- GIZZARD & LIVER STOCK
- CURRY (1tsp)
- THYME (1tsp)
- WATER (TO COOK LIVER AND GIZZARD)
- SEASONING CUBE (2)
- SALT (TO TASTE)
- ONION (1 LARGE)
- RED BELL PEPPER (1 SMALL)
- YELLOW BELL PEPPER (1 SMALL)
- GREEN BELL PEPPER (1 SMALL)
- CARROTS (⅓ CUP)
- GREEN BEANS (⅓CUP)
- MINCED SHOMBO (2)
- BLENDED DRY PEPPER (TO SEASON LIVER AND GIZZARD)
Steps
Wash and Clean Gizzards Thoroughly, place inside pot and season to taste
Wash liver, season to taste and cook in another pot
Wash and peel plantain, cut in cubes and fry till golden brown
Chop up cooked liver and Gizzard, set aside. Slice onions, tomatoes and bell peppers separately and set aside
Add 4 tablespoons of cooking oil in a pan, Stir-fry the onion for 2 minutes. Add dice tomatoes and Minced Habanero pepper(Shombo). Fry for 3-5minutes
If too thick, add liver and gizzard stock or Water. Add Seasoning cube, curry, thyme and salt to taste.
Add gizzard and liver and fry for 3-5minutes. Add plantains and diced bell peppers
Stir thoroughly, leave to simmer for 3-5minutes. Serve and Enjoy😊
