PINEAPPLE FRIED RICE

 How to Prepare PINEAPPLE FRIED RICE 


Do you like Asian flavours? If the answer is yes then you will like this rice. If the answer is no, then I don’t think this is for you. Try some Nigerian style fried rice instead.That’s a funny preamble right? Well, when I made this hen, my husband ate some and he said “Baby  I don’t think I like pineapples in my rice. Lmao. I understand that sweet and savory isn’t for everyone, it’s specially difficult if you like the African flavor profile of spicy and savory.

If you like a little adventure, then this is a great recipe to try. I love the tart and subtle sweet flavors the pineapples add to the rice. I made use of brown rice in this recipe, feel free to substitute regular parboiled rice or basmati. The only rule is that the rice should be at least 1 day old, oid rice work best in fried rice dishes.

Ingredients
  • 3 Tablespoons coconut oil
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • Thumb size ginger (minced)
  • 4 raw eggs (cracked and beaten)
  • 1 red bell pepper (tatashe) – chopped
  • 1 -2 cups green peas
  • 1 small pineapple (peeled and cubed)
  • 2-3 maggi cube
  • Salt – to taste
  • 2 teaspoons white pepper
  • 4 cups day old cooked rice (I used brown rice) (yield from 11/4 cups raw rice)
  • 16-20 shrimps (cleaned and seasoned with salt and pepper)
Instructions
  1. Heat a large pan or wok on medium-high heat. Add in oil. Add in minced onion, garlic and ginger. Stirfry until onion is translucent and fragrant.            
  2. Move the onions aside, add in beaten eggs and scramble. Remove the scrambled eggs and set aside. 
  3. Add in salt, maggi white pepper into the fried onions. Stir. Add in pineapples, peas, shrimp and red pepper. Increase heat to high and stir fry until most of the moisture is evaporated. 
  4. Add in rice. Stir fry for another 3 minutes. Add in scrambled egg and gently combine. 
  5. Fried rice is ready to serve. Serve with some spicy chicken.

 How to Prepare Oven Baked Rice with Shrimps 


Hello new favorite recipe!!! simple Oven baked rice.  Am I excited or what? I honestly feel like I just cracked next level code in this cooking game.

Sometime last week I was completely tired after work. Looked in the fridge and there was absolutely nothing to eat. So I threw together a few things with rice and whala! even my husband said “this tastes like a party in my mouth”

This recipe is a game changer! it’s so versatile too. Try it this exact way or throw together whatever you have on hand. One rule to live by EQUAL PART RICE TO EQUAL PART LIQUID. You don’t need more water than rice. So however much rice you use, use same part water.

More tips :

  • You can wash the rice if you want but make sure it’s thoroughly drained
  • Create a seal with foil. you need trapped steam to completely cook the rice
  • Do not check on the rice while it’s in the oven. opening the pan or stirring will cause it to lose steam and not cook evenly
  • Any type of oven proof pan including baking pan and disposable foil can be used  for this recipe

 

Simple Oven Baked Rice Recipe

Ingredients

  • 2 cups rice (basmati or parboiled rice )
  • 2 cups water
  • 1/3 cup blended pepper mix (optional)


  • Teaspoon each (curry, thyme, paprika)
  • Salt – to taste
  • 3 tablespoons oil (coconut)
  • Handful chopped peppers
  • 1/2 small onion (chopped)

Direction

  • Preheat oven to 425F
  • In an oven safe pan, combine all ingredients.
  • Seal with foil and cover tightly. Bake for 35 mins.

Fluff and serve

TUMERIC RICE

    How to Prepare TURMERIC RICE

      Turmeric Rice is one of the most basic yet delicious rice recipes to prepare in your kitchen. There's no tomato stew to make in this recipe so what can stop you from preparing this rice dish?. 
      

INGREDIENTS: 

*Long grain parboiled rice
*If you are in the USA/UK, use 2 cups.
*If you are in Nigeria, use ½ De Rica cup.
*If you have a weighing scale, use 350g or 0.8lbs.
*2 teaspoons turmeric powder
*1 teaspoon Nigerian curry powder
*1 teaspoon black pepper powder
*1 small red onion
*2-3 cups chicken stock
*A small quantity of red pepper
*A handful green peas
*Salt (to taste)

Notes on the ingredients: 

1. Use enough turmeric powder to colour the rice. Please note that the rice may not look so yellow when you add the parboiled rice to the turmeric mix in the pot but when the rice is done, it will become very yellow.

2. Turmeric is known as yellow ginger in Nigeria. It is known as ajo or ata ile pupa in Yoruba and kurkum in Hausa. You can buy turmeric powder in big supermarkets eg Shoprite in Nigeria. 

3. I used chicken stock for this recipe because I served the rice with Onion Baked Chicken . I used soft chicken which I baked from raw so no boiling of the chicken done to get some chicken stock. This means that for taste, I added chicken stock which I always have in my freezer. I get this chicken stock when I prepare side dishes like Peppered Chicken.
If you want to prepare this with Fried Chicken or Grilled Chicken , cook the chicken with thyme, onions, stock cubes and whatever else you use to season your chicken. Then add the water from cooking that chicken (chicken stock) to the rice during Step 1 in the cooking directions.

4. If you are in Nigeria, red bell peppers are available in big foreign supermarkets. Use tatashe as alternative to the red pepper. The quantity of red pepper you need is so small. 

Before you cook Turmeric Rice or Yellow Rice

1. Rinse and cut the red onions into small pieces.

2. Rinse, remove the seeds and cut the red pepper into small pieces.

3. Prepare the chicken you will serve it with. You can serve with Peppered Chicken or
Onion Baked Chicken .

4. Parboil the long grain parboiled rice. For the quantity of rice stated above, add to boiling water, stir, cover the pot and once it boils again, leave to boil for 10 minutes or till you can easily cut the grain of rice with your finger nails.

Cooking Directions: 

1. Pour the chicken stock into a sizeable pot.

2. Add the turmeric powder, Nigerian curry powder and black pepper.

3. Cover and cook till it boils.

4. Add the parboiled rice, stir and make sure that the liquid in the pot is at the same level as the rice . If not, top it up.

5. Taste for salt and add some if necessary. Stir, cover again and start cooking on medium heat.

6. If you parboiled the rice correctly as described above, the rice should be done by the time the water dries up. Taste to confirm. If not, you will need to add more water and reduce the heat to prevent burning. Continue cooking.

7. When you can no longer see the water in the rice, add the diced red pepper, onions and green peas. Stir only the top of the rice, cover and continue cooking.

8. The rice is done when all the water dries up.

9. Stir with a spatula till the vegetables and the rice are well combined.

10. That's it!

For meat, serve with Peppered Chicken or
Onion Baked Chicken . For side dishes, serve with Fried Plantain , Nigerian Moi Moi, Nigerian Salad or Coleslaw .

Coconut Rice & Shrimps

     How to Prepare Coconut Rice & Shrimps

     Hey mums!  Have you ever tried this recipe?  If you've not,  you're about to be amazed. Its fun and exciting to prepare!. You are definitely in for a treat!.
       The Nigerian Coconut rice,  prepared with  coconut milk extract, is sure to wake up your taste buds,  Accompanied with shrimps, it's a delight
        The coconut rice is called the rice with a twist!  It feels good to see the looks on your kids or husbands faces when they realise you didn't just serve them the good old jolly rice.

                          INGREDIENTS
*  Coconut Ball (1big)
* Rice 4 cups or more
* Onions 2 bulbs
* Maggi naija pot 4 cubes
* Vegetable Oil (150ml)
* Shrimps (20 small piece)
* Pepper (5 pieces or more)
* Grinded ginger and garlic 1 teaspoon each
* Green peas and carrots ( optional)

                         METHODS
* Start by breaking the coconut then grate the coconut with a grater .  Add a cup of warm water and then squeeze out the white water ( coconut milk) which is needed for the preparation of coconut rice. Filter the squeezed out milk and set aside in a bowl.

* Parboil 4 cups of rice
* Grind the onions or you can slice it if you like.
* Heat up pot,  add half cup (150ml)  of vegetable oil
* Allow heating for at least 90sec before adding the grinded or sliced onions. Now fry and stir.
* Add chopped pepper, ginger, garlic and allow frying for some minutes.
* Add the coconut milk and maggi naija pot
* Allow to boil before adding the rice, cook until it is very soft for consumption (say 40mins or there about)
* Add your shrimp (precook the shrimp separately and peel them if you like).
* Put in the green peas and carrots (optional)
* Once the rice is soft enough to your desire, go ahead and serve hot.

NATIVE JOLLOF RICE 🍚🍛

     How to Make Native Jollof Rice 🍚🍛
        Native Jollof rice, also known as iwuk edesi or palm oil rice is a rich Jollof rice style rice dish. It's known as iwk edesi by the efik people of South Eastern Nigeria. It's quite easy to prepare and is absolutely delicious but unlike Jollof rice which is prepared with vegetable oil, palm oil is used instead, this gives it the traditional and distinct taste and flavour.
                         INGREDIENTS
* 2 cups of rice
* 1 medium bunch of ugwu(pumpkin leaves) (chopped)
* Beef (any quantity)
* ½ cup of smoked shrimp🍤
* 1 cup of dried fish
* 2 cooking spoons of tomatoes and pepper(grounded)
* ½ teaspoon of dried pepper
* A cooking spoon of palm oil
* 1 tablespoon of grounded of crayfish
* One crayfish seasoning tablet
* 1 beef seasoning cube
* A litre of water
*Salt to taste no
                      Cooking Procedure
* Season and boil the meat 🍗 with beef seasoning, ½ onion, salt and ½ top dry pepper

* Wash the rice and set aside
* Heat the oil, fry the remaining onion
* Add the grounded tomatoes and pepper, shrimps, fish, beef, grounded crayfish, remaining seasoning and salt to taste. 

* Pour the water and available meat stock and boil for 10mins
* Add the washed rice and cook until almost soft and dry. 
* Finally add the chopped vegetable and cook for about 5mins. 

* SERVE HOT

Savoury Rice 🍚

        How to Prepare Savoury Rice 🍚
     Savoury Rice is a tasty alternative to vegetable or potatoes when servicing a family meal 🍴🍱. Yes you can purchase ready prepared  packets with dried ingredients but do you want to serve reconstituted food to your family that is full of additives?. Why not try making your own version of the tasty meal,  you can even freeze this and microwave for future use. 

                         INGREDIENTS
* 1 Onion
* 3 mushrooms
* ½ red pepper
* 1 tomato🍅
* 4 cooking spoon of vegetable oil
* Rice ( any grain) 
* 2 spoon of vegetable stock powder
* 550ml of boiling water 💧💦
* 50g of peas 
* 1 spoon of curry powder. 
                    Cooking Directions
1)  Prepare the Vegetables: 
* peel and chop the onion
* slice the mushrooms
* deseed and dice the red pepper 
* chop the tomato🍅

2)  Fry the onion in oil until its soft. 

3)  Add the mushrooms and red pepper and cook for a further 2 minutes. 

4)  Stir in the rice

5)  Mix the stock powder with the water 

6)  Add the stock, peas and curry powder to the rice mixture. 

7)  Simmer for 15mins, until the rice is tender

8)  Serve the rice in a bowl and sprinkle the chopped tomato on top.

How to cook Nigerian Jollof Rice

Nigerian Jollof Rice.
                           Nigerian Jollof rice is known to be one of the most popular food in Nigeria because of its mostly served in in occasions
   
             INGREDIENTS
7 Servings
* 1.75 Fryer chichen,fry in
* 1.75 Lime, cut into half,salt to taste
* 1.75 Clove garlic, minced
* 1.75 Water
* 3.5   Tomatoes,peeled
* 3.5.  Onions
* 7.     Red bell pepper
* 1.75 Tomatoes sauce 8oz
* 1.75 Red pepper,crushed; or 1-1/2 teaspoon; cayenne
* 3.5 Bay leaves
* 0.88 Thyme
* 2.62 Rice 
* 5.25 Pounds meat may be substituted for the chicken
* 0.88 cup of peanut oil
                    
                   ........HOW TO COOK.........
*Rub meat/Chicken pieces with cut sides of lime or Lemon , Season with salt and sprinkle with garlic.Let marinate for at least 1 hour.
*In a stewing pot,slimmer chicken/meat with about 1 cup of water until tender.Drain,reserving stock.
*Mince 1 tomato,1 onion and bell peppers. Heat oil in stewing pot and fry meat/chicken until golden.Add minced vegetables, tomato Sauce and crushed red pepper or Cayenne. Stir in bay leaves and thyme. Saute until vegetables are soft. Add rice and cook over medium heat for a few minutes, stir constantly. Add reserved stock,slowly, stirring constantly.
*Cover and cook over low heat until rice is almost soft, stirring occurred to keep rice from sticking. Slice remaining onion and tomato. Add to rice  and continue cooking over low heat,well covered, until rice is tender. It may be necessary to add small amounts of boiling water to keep the rice from sticking.
*Your Jollof Rice is ready,you can now serve with salad,moimoi,fried plantain, e.t.c. as you like.
