PLANTAIN AND GARDEN EGG SAUCE

How to Prepare Plantain and Garden Egg Sauce
         
          Garden Egg sauce in a tasty and nutritious sauce,  mainly served with boiled plantain or boiled yam. It is mainly prepared with palm oil,  it can as well be prepared with vegetable oil but I don't approve that. 
           I don't think there is a better pairing to freshly boiled plantain than garden egg sauce. Anyways, here is my take on garden egg sauce. The recipe varies across households. For those outside Nigeria, you will find Garden Eggs in local ethic grocery stores. 
                         INGREDIENTS
*6-8 large garden eggs (any shape will do)
* 2 tablespoons of palm oil
* ½ of a medium onion ( thinly sliced)
* 2 large Bell pepper (Tatashe), 2 hot pepper (Rodo) and 1 medium onion (rough blended)
* Flaked fish (I used mackerel- boiled and De-boned
* 1 tablespoon of blended crayfish
* Seasoning and salt to taste
* Plantain
                              METHOD
* Boil the Garden eggs for 5mins. Remove from heat and set aside to cool. Peel the garden eggs skin by gently pulling on the thin white coating out and remove the seeds In the center if you prefer. Roughly chop up the the peeled garden eggs or lightly crush them.

* Peel plantain and boil for 5-10minutes
* Set a pot on medium heat,  add the oil and wait 2minutes then add in the onions. Fry the onions until translucent. 

* Add in all the ingredients except the fish. Reduce the heat to medium and simmer the sauce for 10mins.
Allow to cook for 3mins

* Add the crushed garden eggs and fish into the sauce , Combine!. Taste and adjust for seasoning. Simmer for another 2-3minutes. After 3minutes your garden egg sauce is ready

Coconut Rice & Shrimps

     How to Prepare Coconut Rice & Shrimps

     Hey mums!  Have you ever tried this recipe?  If you've not,  you're about to be amazed. Its fun and exciting to prepare!. You are definitely in for a treat!.
       The Nigerian Coconut rice,  prepared with  coconut milk extract, is sure to wake up your taste buds,  Accompanied with shrimps, it's a delight
        The coconut rice is called the rice with a twist!  It feels good to see the looks on your kids or husbands faces when they realise you didn't just serve them the good old jolly rice.

                          INGREDIENTS
*  Coconut Ball (1big)
* Rice 4 cups or more
* Onions 2 bulbs
* Maggi naija pot 4 cubes
* Vegetable Oil (150ml)
* Shrimps (20 small piece)
* Pepper (5 pieces or more)
* Grinded ginger and garlic 1 teaspoon each
* Green peas and carrots ( optional)

                         METHODS
* Start by breaking the coconut then grate the coconut with a grater .  Add a cup of warm water and then squeeze out the white water ( coconut milk) which is needed for the preparation of coconut rice. Filter the squeezed out milk and set aside in a bowl.

* Parboil 4 cups of rice
* Grind the onions or you can slice it if you like.
* Heat up pot,  add half cup (150ml)  of vegetable oil
* Allow heating for at least 90sec before adding the grinded or sliced onions. Now fry and stir.
* Add chopped pepper, ginger, garlic and allow frying for some minutes.
* Add the coconut milk and maggi naija pot
* Allow to boil before adding the rice, cook until it is very soft for consumption (say 40mins or there about)
* Add your shrimp (precook the shrimp separately and peel them if you like).
* Put in the green peas and carrots (optional)
* Once the rice is soft enough to your desire, go ahead and serve hot.

POTATO 🍠 SALAD

          How to prepare "POTATO SALAD"
         Potato Salad is made from boiled potatoes and a variety of few fruits along with it.  It's generally considered a side dish, as it usually accompanies the main course. It's a creamy , tasty kind of salad.
                        INGREDIENTS 
* Boiled potatoes(cut in cubes)
* Boiled Carrots(cut in cubes)
* Fresh peas ( boiled) -2 cups
* Onions( chopped and blanched)-1 medium bulb
* Mayonnaise
* Parsley (finely chopped)  - 2 tbsp
* Cucumber ( sliced for Garnishing) - 1 large size
* 1 Maggi Chicken Tablet
* Salt to taste.
                             METHOD
* In a clean bowl toss all the ingredients except mayonnaise,  parsley and cucumber. 
* Add the Maggi chicken,  salt and mayonnaise and toss well
* Pour into a platter and garnish with cucumber and parsley. 
* Serve as a side dish or as a meal with grilled chicken......... Yummy!!!

NATIVE JOLLOF RICE 🍚🍛

     How to Make Native Jollof Rice 🍚🍛
        Native Jollof rice, also known as iwuk edesi or palm oil rice is a rich Jollof rice style rice dish. It's known as iwk edesi by the efik people of South Eastern Nigeria. It's quite easy to prepare and is absolutely delicious but unlike Jollof rice which is prepared with vegetable oil, palm oil is used instead, this gives it the traditional and distinct taste and flavour.
                         INGREDIENTS
* 2 cups of rice
* 1 medium bunch of ugwu(pumpkin leaves) (chopped)
* Beef (any quantity)
* ½ cup of smoked shrimp🍤
* 1 cup of dried fish
* 2 cooking spoons of tomatoes and pepper(grounded)
* ½ teaspoon of dried pepper
* A cooking spoon of palm oil
* 1 tablespoon of grounded of crayfish
* One crayfish seasoning tablet
* 1 beef seasoning cube
* A litre of water
*Salt to taste no
                      Cooking Procedure
* Season and boil the meat 🍗 with beef seasoning, ½ onion, salt and ½ top dry pepper

* Wash the rice and set aside
* Heat the oil, fry the remaining onion
* Add the grounded tomatoes and pepper, shrimps, fish, beef, grounded crayfish, remaining seasoning and salt to taste. 

* Pour the water and available meat stock and boil for 10mins
* Add the washed rice and cook until almost soft and dry. 
* Finally add the chopped vegetable and cook for about 5mins. 

* SERVE HOT

Oven Baked Ratatouille & Sausages

How to prepare oven baked ratatouille & Sausages
         Oven baked ratatouille and sausages has been a hearty and flavourful dish for years, relates Diane Halferty of Tucson, Arizona.
                         INGREDIENTS
* 1 onion (cut into 16 wedges)
* 3 Courgettes( cut into bite-sized pieces)
* 1 red pepper ( cut into bite-sized pieces)
* 3 tablespoons of olive oil
* 8 large pork sausages
* 2 garlic cloves, ( crushed)
* 400g can chopped tomatoes
                       PREPARATION
1)Heat oven to 220°C/200°C . Place onion, courgettes and red pepper in a baking dish, large enough to fit them in a single layer. Drizzle over 2tbsp of the olive oil and season cook in the oven for 20mins.

2)  Meanwhile, heat remaining olive oil on a frying pan cook the sausages for about 5mins until lightly browned in all sides.

3)  Stir the garlic and chopped tomatoes into the vegetable, season again then place the sausages on top and return to the oven to cook for a further 20mins until the vegetables are tender...............

Savoury Rice 🍚

        How to Prepare Savoury Rice 🍚
     Savoury Rice is a tasty alternative to vegetable or potatoes when servicing a family meal 🍴🍱. Yes you can purchase ready prepared  packets with dried ingredients but do you want to serve reconstituted food to your family that is full of additives?. Why not try making your own version of the tasty meal,  you can even freeze this and microwave for future use. 

                         INGREDIENTS
* 1 Onion
* 3 mushrooms
* ½ red pepper
* 1 tomato🍅
* 4 cooking spoon of vegetable oil
* Rice ( any grain) 
* 2 spoon of vegetable stock powder
* 550ml of boiling water 💧💦
* 50g of peas 
* 1 spoon of curry powder. 
                    Cooking Directions
1)  Prepare the Vegetables: 
* peel and chop the onion
* slice the mushrooms
* deseed and dice the red pepper 
* chop the tomato🍅

2)  Fry the onion in oil until its soft. 

3)  Add the mushrooms and red pepper and cook for a further 2 minutes. 

4)  Stir in the rice

5)  Mix the stock powder with the water 

6)  Add the stock, peas and curry powder to the rice mixture. 

7)  Simmer for 15mins, until the rice is tender

8)  Serve the rice in a bowl and sprinkle the chopped tomato on top.

White Soup 🍲( Ofe Nsala)

How to Prepare white Soup 🍲(OFE NSALA) 
    Nsala Soup or white soup is a tasty, fast and easy soup recipe that has its origins in the Riverine areas of Nigeria.
    Nsala soup is perfect for a cold rainy day due to its spicy taste. Because it is so easy to prepare,  you can count on it to save the day when you run out on soup a few days before the big soup day :)
                         INGREDIENTS
1)  Cat Fish:  4 one-inch thick pieces
2)  Fresh or Dry Utazi Leaves(Gongronema latifolium)
3)  Thickener:  Raw white yam/ yam powder/ potato puree
4) Habanero Pepper:  to taste
5)  Salt(to taste)
6)  1 handful of crayfish
7)  1 stock cube (Maggi/ Knorr)
8)  1 ogiri okpei( Nigerian traditional seasoning) .
                       Before Cooking
1)  Cut the catfish into shapes of your choice. Place in a bowl and pour a very hot 🔥 water 💧 on the fish. This process of pouring hot water on the fish toughen the skin of the fish so that the pieces do not disintegrate while cooking the soup. Live for about 2mins and wash the fish with cold water. You should also wash off any slimy substance on the outer skin of the fish at this time.

2)  Boil a few cubes of raw white yam . When soft,  pound with a mortar and pestle till a smooth paste is formed, then set aside.  You can substitute white yam with yam powder or potato puree for the thickening.

3)  Wash and pound/blend the utazi leaves , chilli pepper and the crayfish and set aside. Utazi is bitter in taste and only used for flavouring so one or two leaves should be enough especially when using the fresh leaves.
                    Cooking Directions
1) Place the cat fish in a pot 🍯 and pour enough water 💧 to cover the fish. Add the seasoning and cook till done. Feel free to add beef and dry fish to the recipe.

2)  When the catfish is almost done,  add the crayfish,  pepper, and the blended utazi leaves . Also add the yam paste in small lumps and salt to taste.                                    

NOTE: Catfish is what makes Nsala soup(white soup)  what it is, giving it the unique taste it has so it is essential to this recipe.  The only other fish that I have found to be close to catfish as regards to this recipe is Conger Eel.

3) Cover the pot 🍯 and allow the contents to cook at high heat till all the yam paste have dissolved. While cooking,  if you think that the yam paste will make the soup too thick,  you can remove some that are yet to dissolve.
        The Nigerian Nsala Soup(White Soup)  is ready to be served with Pounded Yam,  Eba, etc.

BANGA SOUP🍲(OFE AKWU)

     HOW TO PREPARE BANGA SOUP🍲
  Banga Soup is a special dish mostly common among the people of Delta state, Particularly the Urobo people. The spices are special and can be easily identified in the market as Banga Soup spices. 
                         INGREDIENTS
I) 1 oz of palm kanel nuts 
II) 1 Onions
III) 6 pieces of pepper (yellow pepper) 
IV)  Seasoning (Maggi, tyko, rogojie, obeletietien). 
v)  1kg of beef meat🍗, goat meat, fish... 
vi) 0. 5 oz of periwinkle (optional) 
VII)  6 pieces of snails (optional)  
VIII)  0. 5 stick of oburunbebe
                            METHOD
1) Boil palm Kanel nuts for 25minutes
2)  Check the palm Kanel if soften, pour out water 💧💦 and extract oil by pounding the nuts with a mortar,  after which,  add some water💧💦
3)  Put the extract in a pot 🍯 and boil for 30minutes . 
4)  Pound pepper, Tyko, Rogojie, Sprinkle few leaves 🌿 of Obeletientien, add all to the soup 🍲 ,  add a pinch of salt and seasoning, break the oburunbebe stick in the soup, these spices gives it a great aroma and taste. 
5)  Add the meats, fish, snail, periwinkle and boil for 15mins,  after this, check seasoning if tasty. The soup 🍲 becomes thick.  Remove the Oburunbebe (brown stick) . Save for another use. 
6)  Your Banga Soup🍲 is now ready 👌👌👌,  you can serve with fufu or any recipe of your choice.
