How to Make Native Jollof Rice ๐๐
Native Jollof rice, also known as iwuk edesi or palm oil rice is a rich Jollof rice style rice dish. It's known as iwk edesi by the efik people of South Eastern Nigeria. It's quite easy to prepare and is absolutely delicious but unlike Jollof rice which is prepared with vegetable oil, palm oil is used instead, this gives it the traditional and distinct taste and flavour.
INGREDIENTS
* 2 cups of rice
* 1 medium bunch of ugwu(pumpkin leaves) (chopped)
* Beef (any quantity)
* ½ cup of smoked shrimp๐ค
* 1 cup of dried fish
* 2 cooking spoons of tomatoes and pepper(grounded)
* ½ teaspoon of dried pepper
* A cooking spoon of palm oil
* 1 tablespoon of grounded of crayfish
* One crayfish seasoning tablet
* 1 beef seasoning cube
* A litre of water
*Salt to taste no
Cooking Procedure
* Season and boil the meat ๐ with beef seasoning, ½ onion, salt and ½ top dry pepper
* Wash the rice and set aside
* Heat the oil, fry the remaining onion
* Add the grounded tomatoes and pepper, shrimps, fish, beef, grounded crayfish, remaining seasoning and salt to taste.
* Pour the water and available meat stock and boil for 10mins
* Add the washed rice and cook until almost soft and dry.
* Finally add the chopped vegetable and cook for about 5mins.
* SERVE HOT
